Mood Matters

This may sound silly, but mood absolutely matters when baking! If I bake when I'm upset, my recipes don't turn out. I'm heavy-handed while measuring and rough on dough and batter. It's because I'm not physically in the proper state of mind to turn out perfect baked goods. Baking is a chemistry and any tiny adjustment such as a slight over pour can dramatically change the end result. So in other words, be like Leslie Knope! You don't need to have a strong appreciation for breakfast food or an unquestionable devotion to creating new national holidays, but she dedicates 100% of herself to what she loves and never allows outside influences to affect her in ways that will negatively impact her end results.
